Do you ever watch any of the videos by BuzzFeedTasty and feel like, 'No way! but this is easy, I can do this!" Yes, I can really relate with that feeling. Several times and over. So one late afternoon, I perked up and decided to try out one of their many food porny looking recipes- the ONE-PAN PESTO CHICKEN WITH VEGGIES. Will it be as good as it looks? I had no idea. I had all ingredients save for the Pesto which I had to make from scratch. 

Fresh herbs in Accra are getting quite common with small farming businesses churning out basil, parsley, arugula, mint and all kinds of exciting herbs. That's just beautiful. I remember how I had to buy imported parsley most of the time from foreign-owned supermarkets. No more. Its now Farmers Market or Roses & Lilies for me every Saturday. 

I grabbed basil and cherry tomatoes from Roses & Lilies and stopped by Shop & Save for some cashew nuts before heading home. Sadly the lights were out when I reached the house and I was forced to prepare the meal surrounded by the glow of a candle. This prevent me from taking photos of the meal preparation 😭.

PREP TIME: 15 mins

COOK TIME: 30 mins           DIFFICULTY: Easy


2 Chicken Breasts

2 Cups of Cherry Tomatoes

2 Cups Diced Zucchini 

1 Cup Fresh Basil Leaves

1 Cup Parsley Leaves

2 cloves of Garlic

Handful of cashew nuts

2 Tablespoonfuls Olive Oil

3 Tablespoonfuls Grated Mozzarella Cheese

Salt & Black Pepper to taste


Preheat oven to Gas Mark 3

Making the Pesto:

  • Pluck parsley leaves from stem and place in a spice mortar or processor.
  • Add basil, garlic, salt, black pepper and cashew nuts. Pound till mix is smooth for about 5 mins. If you use a food processor it will definitely be faster but less flavourful. 
  • Pesto is ready to be used.

Making The Chicken & Veggies

Pat Chicken Breasts dry with kitchen paper and arrange in baking dish.

Arrange cherry tomatoes and  zucchini by the meats. 

Sprinkle chopped garlic, salt & black pepper onto everything in the dish. 

Scoop out Pesto onto the Chicken breasts. 

Lightly drizzle olive oil over the lot.

Next, sprinkle grated mozzarella Cheese onto the pesto.


Bake for 30 mins at Gas Mark 3. 

Enjoy without guilt. 😄

My Review of this recipe:

The Pesto sank into the Chicken delicately without overwhelming it. Marinating the chicken before would have given it a much more flavourful taste. The cashew nuts were marvellous in the Pesto I made  and I can guarantee it's pretty competitive to store-bought Pesto. Not sure which Buzzfeed used i.e made-from-scratch or store-bought. Overall it was indeed TASTY! 😄😍
