Raisin Coffee Pancake Muffins Recipe.
What a wet gray Sunday it's been! Yet a wonderful post-experience after months of dryness and extreme heat & humidity! Sunday service was fantastic! It's our month of Finance & Investment and as a church we are studying God's Word on prosperity, financial management and investment. Poverty really isnt our portion. Do I hear an Amen?
After writing an appreciation post for my lifestyle blog which won Top Lifestyle Blog in AFRICA for 2016 ( doing a jiggle dance!) I felt hungry for a snack. The Jollof we had for lunch was not enough at all! I needed something quick yet with an ability to give an Mmmmm...! Pancake muffins was the only thing which came to mind.
My Tefal muffin tin came to the rescue again! You have to forgive me for this but I had to use a quick Pancake mix for man was too hungry to look for pancake ingredients. Forgive me!! I didn't make boring pancake muffins however. I was going to make Raisin Coffee Pancake Muffins! Ta daaa! Check out the recipe for basic pancake on the BBC GoodFood site.
What you will need:
3 cups of Pancake mix ( I used Aunt Jemima)
1 teaspoon of vanilla essence
2 spoons of decaf coffee granules
2 spoonfuls of sun-dried raisins
1 spoon of sugar ( optional)
This makes six pancake muffins
1. Preheat oven
2. Mix 3 cups of Aunt Jemima Pancake mix with two cups of water and mix well for a smooth mixture.
3. Toss in two spoonfuls of raisins.
4. Add in two spoons of coffee granules with a teaspoon of vanilla. Stir well till coffee granules are dissolved in.
5. Lightly oil-spray the muffin tin to prevent the pancake from sticking to the sides and bottom.
6. Check in 10 minutes by inserting a toothpick gently in the middle. If it comes out dry then it's done! Oya!
That's it actually. Simple and short. The best meals & snacks are made from very simple ingredients.
What a difference from the usual Pancake muffins I have been making! Huge difference!
The taste was exquisite! A great balance between the coffee and the pancake. The raisins were an absolute delight within the throes of the fluffiness. Divine.
A smother of strawberry jam went perfectly with each bite.
Well, I had to go back to work. I find such cooking breaks so relaxing especially after sitting awhile when working from home. The flavour from the oven is almost like a muscle relaxant.
Did I mention the extra fluffiness of the pancake? Perfectly dry and fluffy. Glorious!
